Job Description : F&B Controller & Operations Support ManagerLooking for a controller with hospitality experience specific to food and beverage to work in tandem with our Chefs, Accounting team, and Ownership to implement and manage standardized SOP’s for ensuring profit contribution for a la carte and events through a combination of pro-active planning and modeling, as well as verification of actual results, with variance analyses and solutions to consistently achieve the agreed targets and objectives including the following:P&L’s by Event — — works in collaboration with the teams to consistently complete accurate P&L’s by Event tied into schedules, menus, key product prices, beverage package use, and costs. Including post-event verification.Food, BWL — works in collaboration with the key team members on bi-weekly menu engineering analyses, F&B cost estimates, review of inventories, high-cost item analyses, and evaluation of the achievement of overall costs of goods sold [COGS]. Evaluate and establish event bar stock inventory standards and analysis post-event.Labor Scheduling & Forecasting – weekly reports working with the FOH managers and Chefs to ensure that scheduled hours are accurately defined based on the revenues forecasted, and adjusted with seasonal shifts and week-part demand variances.POS Systems and Control Dashboard Reports – understand and become key trainer for REVEL, Avero Reports and Analytics, our Excel operating models, Sourcery. Proficiency in menu sales analysis by dish, monthly menu engineering, food purchasing evaluation. Prepare variance analysis for food & beverage and communicating/discuss with ‎relevant partiesOther Responsibilties Include: – Daily sales reportingBalancing restaurant/hotel POS daily sales in an accounting entry for controller to enter/review into M3Ensuring bi-weekly tip allocation payouts match what’s reported/collected in sales summaryTroubleshooting any credit card device issues, such as the current problem at wild common – being liaison between FreedomPay/revel and the property manager (ben m.) to make sure devices are running properly- POS merchant account maintenanceWorking with IT contractors to achieve & maintain PCI compliance standardsTaking responsibility for any chargebacks, working w/ property management to dispute as needed- Property-level expendituresResponsible for managing (uploading) all AmEx receiptsResponsible for assigning GL categorization to all AmEx transactions for controller to balance/upload/reconcileResponsible for making sure COD payments are recorded in electronic check log- Inventory controlsMaintaining custom google sheet inventory templatesMake sure field managers maintain all invoices in Sourcery and (for BWL) log purchases/depletions for EOM balance- Management KRA’sWork with the team members on draft KRA’s for the points in these analyses / Events P&L’s forecasts and schedules, food cost and pricing tactics, inventory management.- Shared Strategies and Operational ImprovementsWork with the Chefs and Ops Managers on the business action plan tactics proposed to the EPG Support Team for review and feedback.- Communications with the Support TeamUpcoming 10-day Revenue forecast based on ongoing trends, Avero reports, and demandFinancials – payroll and other key cost area reportingPast week review – revenues vs forecast, events profit contributionMonthly closing – assist with inventories, recording by categoryMonthly Menu Engineering – ensure completion and help with reviews and solutionsPurchasing – work with Chefs on weekly orders based on REVEL data and event menus/countsStatus of KRA’s as agreed- Food & Beverage CostsControls — Establish, maintain and safeguard inventories of high-cost wines, liquor, meat, and fish items; these are to include opening, post-shift, and close-of-day counts, confirming Revel sales by item utilizing the 80/20 rule.- Review of Inventories & Operations (Ongoing Focus)Review and document all procedures as to safeguarding and issuing of products for production and on-floor inventories. Continuously study weaknesses in controls implemented at the restaurant and ‎suggestions for improvements.- Purchasing and Receiving StandardsReview purchasing standards – product quality and inventory levels, the balance of consistency, unique local products, service, and price.- Labor ManagementMaintain the staff scheduling standards for the servers, bartenders and kitchen/culinary teams. Maintain standards that meet the monthly budgeted FTEs as set in the annual operating budget. Establish and maintain weekly schedules that are based on forecasts of the business.
